Soufflé au Grand-Marnier

So light, and still so easy,
when following my instructions !!!

Prep time: 15 minutes
Cook time: 11 minutes
Four 4 persons


  • 4 egg yolks
  • 7 egg whites
  • 5 tablespoons of sugar
  • 1 glass of Grand-Marnier
  • 10 gr. butter (To grease the ramekins)


  • 4 Mediums ramekins
  • Stand or hand mixer
  • brush for cooking
  • 1 kitchen spatula
  • Preparation:

    1. Preheat oven to 410 degrees (210 C°)
    2. Butter the inside of the ramekins with softened butter by using the brush (the bottom, the sides from bottom to top, and the borders). Sprinkle with sugar, and shuttle upside down to take away the excess of sugar. Put aside in the fridge.
    3. In a large bowl, put the egg yolks, and 5 tablespoons of sugar. Beat it on high speed until the mixture whitens. Add the Grand-Marnier, and blend completely. Put aside.
    4. Beat egg whites with a little bit of sugar, until the egg whites hold stiff.
    5. With a kitchen spatula, put a small portion of the egg whites to the preparation to lighten it, and put gently the rest of the whites by using the spatula, with movements from bottom to top until you obtain an homogeneous blend.
    6. Fill the ramequin almost until the borders.
    7. Bake for 11 minutes (it may also depends from your own oven). Never open the door during baking. The inside of the Soufflé must remain creamy.
    8. Dust with icing sugar and serve immediately.
    9. For some who like, you can bring te Grand-Marnier bottle on the table and pour a little bit of Grand-Marnier on the soufflé after having made a small hole.
